Indulge in succulent creamy pesto chicken featuring a zesty Italian pesto blend of basil, pine nuts, Parmesan, and garlic. Also perfect with pork tenderloin. Serve over rice or pasta, garnished with extra Parmesan cheese.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 4 skinless, boneless chicken breast halves - cut into strips
  • 4 large cloves garlic, sliced
  • 3.5 tablespoons sherry
  • 0.25 cup pine nuts
  • 0.5 cup chopped fresh basil
  • 1 (8 ounce) container reduced fat sour cream
  • 3 tablespoons grated Parmesan cheese
  • ground black pepper to taste
Instructions:
  • In a skillet over medium heat, sauté chicken in olive oil until lightly browned, about 5 minutes. Add garlic and sherry to the skillet, and cook until the liquid is reduced and chicken is cooked through with clear juices.
  • Add pine nuts to the skillet and cook for 2 to 3 minutes over medium heat. Lower the heat, then stir in basil, sour cream, Parmesan cheese, and pepper. Cook until heated through.
