Upgrade your weeknight dinner with delicious saucy noodles topped with flavorful pork mince and fresh herbs. Say goodbye to boring instant noodles!
Ingredients:
  • 2 x 200g pkts dried thick rice noodles
  • 56.88 gm peanut oil
  • 500g pork mince
  • 1 1/2 tsp dried chilli flakes
  • 4 garlic cloves, crushed
  • 18.00 gm sesame seeds, toasted
  • 131.25 gm salt-reduced soy sauce
  • 16.00 gm brown sugar
  • 20.00 ml rice wine vinegar
  • 4 green onions, thinly sliced
  • 125.00 ml chopped fresh coriander
  • 1 lebanese cucumber, seeded, cut into matchsticks
  • 3 radish, thinly sliced
  • 20.00 ml sesame oil
Instructions:
  • Prepare the noodles according to the package instructions.
  • Heat a generous drizzle of peanut oil in a large frying pan over high heat. Sauté the mince, using a wooden spoon to break it up, until nicely browned, about 7-8 minutes. Stir in chilli, garlic, and a tablespoon of seeds, and cook for an additional minute, stirring constantly.
  • Combine soy sauce, sugar, vinegar, half of the onion, half of the coriander, and the remaining peanut oil in the pan. Add noodles and cook until everything is well combined and warmed through.
  • Garnish the noodles with cucumber, radish, remaining coriander, onion, and seeds. Finish by drizzling sesame oil on top.
