Pork tonkatsu & noodles

Crispy breaded pork served with fresh veggies and noodles for a delicious twist on a classic Japanese dish.
Ingredients:
  • 2 tablespoons plain flour
  • 100 g fresh, fine breadcrumbs
  • 1 large free-range egg
  • 4 x 120 g higher-welfare pork fillets
  • 300 g udon noodles
  • 1 small carrot
  • ½ an Asian or pointed cabbage
  • low-salt soy sauce
  • vegetable oil
  • mustard
  • 1 fresh red chilli optional
Instructions:
  • Place flour on a large plate and season. Put breadcrumbs on another plate and beat egg in a shallow bowl. Flatten pork fillets to 1cm thickness. Coat each fillet in flour, then egg, and finally breadcrumbs. Boil noodles according to package instructions. Shred carrot and cabbage thinly; mix in a bowl. Toss drained noodles with veggies and soy sauce. Divide into bowls. Heat oil in a large frying pan. Cook pork fillets until golden brown, about 3-4 minutes per side. Slice and place on top of noodles. Serve immediately with extra soy sauce, mustard, and chopped chili.
