Easy homemade pad Thai with authentic Thai flavors.
Ingredients:
  • 250g packet rice stick noodles
  • 42.00 gm lime juice
  • 48.80 gm fish sauce
  • 32.00 gm brown sugar
  • 36.40 gm peanut oil
  • 2 chicken breast fillets, thinly sliced
  • 500g green prawns, peeled, deveined
  • 3 green onions, thinly sliced diagonally
  • 2 small red chillies, deseeded, finely chopped
  • 2 Free Range Eggs, lightly beaten
  • 250.00 ml bean sprouts, tails removed
  • 62.50 ml roasted peanuts, finely chopped, optional
  • 125.00 ml coriander leaves
  • lime wedges, to serve
Instructions:
  • Place noodles in a heat-proof bowl and cover with hot water. Let sit until tender. Drain and rinse with cold water.
  • In a jug, blend lime juice, fish sauce, and sugar until well mixed using a fork.
  • Preheat a wok over high heat and swirl in oil. Stir-fry chicken until golden, then add prawns, onions, and chillies. Cook until prawns turn pink. Toss in noodles and stir-fry for 2 minutes.
  • Pour the zesty lime juice mixture into the wok, combining everything with a quick toss. Gently drizzle the eggs over the noodles. Stir-fry for one minute before adding the sprouts and tossing everything together.
  • Plate the flavorful Pad Thai, generously topping it with crunchy peanuts and fresh coriander leaves. Accompany with zesty lime wedges for a burst of citrus flavor.
