Create a quick and delicious vegetarian pad Thai for dinner.
Ingredients:
  • 250g rice stick noodles
  • 36.80 gm Rice Bran Oil
  • 2 eggs, lightly beaten
  • 82.50 ml vegetarian pad Thai paste
  • 250g firm tofu, diced
  • 3 green onions, trimmed, finely sliced
  • 100g beansprouts, trimmed
  • 40.00 ml chopped peanuts (optional)
  • lime wedges, to serve
Instructions:
  • In a heatproof bowl, soak the noodles in hot water until just tender, about 10 minutes. Then, drain and set aside.
  • Heat a generous drizzle of oil in a spacious frying pan over medium-high heat until it shimmers. Pour in the egg, swirling the pan to cover the surface evenly. Cook for approximately 2 minutes or until the egg is cooked through. Transfer to a plate, roll it up, and give it a rough chop.
  • Heat the rest of the oil in a pan, then add the paste and tofu. Stir and cook for 1 minute until fragrant. Add the noodles and continue to stir and cook for another minute until the noodles are heated through. Take off the heat and enjoy.
  • Portion out noodle mixture evenly into bowls. Garnish with onions, beansprouts, and egg. Add a sprinkle of peanuts for an extra crunch, if desired. Serve with lime wedges on the side.
