Create a delectable homemade vegetarian pad Thai with rice noodles, scrambled egg, tofu, and a flavorful sauce.
Ingredients:
  • 0.66666668653488 cup dried rice vermicelli
  • 0.25 cup peanut oil
  • 0.66666668653488 cup thinly sliced firm tofu
  • 1 large egg, beaten
  • 4 cloves garlic, finely chopped
  • 0.25 cup vegetable broth
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 0.5 teaspoon dried red chili flakes
  • 3 tablespoons chopped peanuts
  • 1 pound bean sprouts, divided
  • 3 green onions, whites cut thinly across and greens sliced into thin lengths - divided
  • 2 limes, cut into wedges for garnish
Instructions:
  • Place rice vermicelli noodles in a bowl of hot water for 30 minutes to an hour until softened. Drain and set aside.
  • In a large wok, warm the peanut oil over medium heat.
  • Sauté tofu in the wok until all sides turn golden brown, making sure to turn the pieces regularly.
  • Transfer the tofu onto paper towels to drain using a slotted spoon.
  • Save all the flavorful oil from the wok except 1 tablespoon in a small bowl for later use.
  • Sizzle the last tablespoon of oil in the wok over medium heat.
  • Add the beaten egg and gently mix in the hot oil to create scrambled eggs.
  • Take the egg out of the wok and set it aside.
  • Return the reserved peanut oil from the small bowl back into the wok.
  • Coat garlic and drained noodles in wok with oil for even distribution.
  • Add the vegetable broth, lime juice, soy sauce, and sugar, then delicately mix in the noodles until they are fully coated with the flavorful sauce.
  • Incorporate tofu, scrambled egg, salt, chili flakes, and 3 tablespoons peanuts with a gentle touch, ensuring all ingredients are well-combined.
  • Combine bean sprouts and green onions, setting aside a small amount of each for topping. Sauté until bean sprouts have slightly softened, for 1 to 2 minutes.
  • Lay out warm noodles on a serving platter and top with 3 tablespoons of peanuts, bean sprouts, and green onions. Add lime wedges around the edges of the platter for a zesty touch.
