Tom Thai's authentic pad thai features rice noodles, chicken, peanuts, and a flavorful homemade tamarind sauce.
Ingredients:
  • 12 ounces dried rice noodles
  • 0.5 cup white sugar
  • 0.5 cup distilled white vinegar
  • 0.25 cup fish sauce
  • 2 tablespoons tamarind paste
  • 2 tablespoons vegetable oil, divided
  • 2 boneless, skinless chicken breast halves, sliced into thin strips
  • 1.5 teaspoons garlic, minced
  • 4 large eggs, beaten
  • 1.5 tablespoons white sugar
  • 1.5 teaspoons salt
  • 1 cup coarsely ground peanuts
  • 2 cups bean sprouts
  • 0.5 cup chopped fresh chives
  • 1 tablespoon paprika, or to taste
  • 1 medium lime, cut into wedges
Instructions:
  • Soak rice noodles in a large bowl filled with room temperature water for 30 to 60 minutes until softened, then drain.
  • Combine 1/2 cup sugar, vinegar, fish sauce, and tamarind paste in a saucepan. Heat over medium heat, whisking until it simmers. Remove from heat.
  • In a hot skillet, sizzle chicken in 1 tablespoon oil until fully cooked and juices run clear, about 5 to 7 minutes. Remove from heat.
  • In a large skillet or wok over medium-high heat, heat the remaining tablespoon of oil. Cook garlic until fragrant for about 1 minute. Stir in eggs and scramble until nearly cooked through for about 2 minutes. Add chicken and rice noodles, stir until well combined.
  • Add the tamarind mixture, 1 1/2 tablespoons sugar, and salt, and simmer until noodles are tender for 3 to 5 minutes. Then mix in peanuts and cook until warmed through for 1 to 2 minutes. Top with bean sprouts, chives, and paprika, and serve with lime wedges.
