Kielbasa Sausage and Rice

Savor a quick and flavorful Creole skillet with kielbasa, rice, and veggies simmered in Progresso® chicken broth - a delicious meal in just 30 minutes!
Ingredients:
  • 1 medium onion, chopped (3/4 cup)
  • 1 clove garlic, finely chopped
  • 1/2 cup chopped green bell pepper
  • 1/2 lb fully cooked kielbasa sausage, cut lengthwise into fourths, sliced
  • 3 large tomatoes, chopped (2 1/2 cups)
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1/2 teaspoon salt
  • 1/2 teaspoon Cajun seasoning
  • 1 1/2 cups uncooked instant rice
  • Red pepper sauce, if desired
Instructions:
  • Heat a 12-inch skillet sprayed with cooking spray over medium-high heat. Add onion, garlic, and bell pepper. Cover and cook for 3 to 5 minutes, stirring occasionally, until vegetables are crisp-tender.
  • Combine the kielbasa, tomatoes, broth, salt, and Cajun seasoning in a pot. Bring to a boil, then stir in the rice. Once boiling, lower the heat and let it simmer for 8 to 10 minutes until the rice is tender. Fluff with a fork and serve with pepper sauce.
