Spicy beef mince dish ready in 30 mins with easy supermarket shortcuts.
Ingredients:
  • 539g pkt frozen sweet potato crinkle-cut chips
  • 1 ripe tomato, finely chopped
  • 125g can corn kernels, drained
  • 1 avocado, finely chopped
  • 62.50 ml chopped fresh coriander leaves
  • 1 red onion, finely chopped
  • 18.20 gm olive oil
  • 500g lean beef mince
  • 15.00 gm Cajun seasoning
  • Sour cream, to serve
Instructions:
  • For perfect sweet potato chips, preheat the oven to 220C/200C fan forced. Lay the chips in a single layer on a large baking tray. Bake them for 20 minutes, flipping halfway through, until tender. In a bowl, mix tomato, corn, avocado, coriander, and half the onion. Season well, then toss everything together to create a flavorful salsa. Enjoy!
  • Heat oil in a large frying pan over high heat. Add remaining onion and cook for 1-2 minutes. Then, add mince and Cajun seasoning. Cook and break up the mince with a wooden spoon for 6 minutes until browned. Pour in 80ml (1/3 cup) water and cook for an additional 1-2 minutes. Remove from heat.
  • Arrange the sweet potato chips and mince mixture on a platter. Top with avocado salsa, dollops of sour cream, and lime wedges before serving.
