Loaded baked potato with savory sautéed mushrooms, onions, and a creamy yogurt topping - simple yet satisfying comfort food.
Ingredients:
  • 1 large baking potato
  • 1 tablespoon unsalted butter
  • 0.25 cup chopped onions
  • 0.5 cup chopped mushrooms
  • salt to taste
  • 2 tablespoons nonfat plain yogurt
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Using a fork, pierce the potato a few times. Place it on a microwave-safe plate and microwave on high for approximately 10 minutes until tender but not mushy. Transfer the potato to a baking dish.
  • Place in the hot oven and bake for 15 minutes.
  • As the potato bakes, melt butter in a saucepan over medium heat. Sauté onion until tender, around 5 minutes. Add mushrooms and season with salt. Cover and cook on low heat until mushrooms are tender, about 5 minutes. Remove from heat.
  • Take the potato out of the oven. Cut the potato lengthwise halfway and gently press to open. Add onion-mushroom mixture and yogurt on top.
