Ling, potato and mushroom bake

Easy, quick, and healthy baked ling with mushrooms and potatoes - ready in just 40 minutes!
Ingredients:
  • 500g chat potatoes, quartered
  • 56.88 gm olive oil
  • 1 large brown onion, cut into thin wedges
  • 125g pancetta, diced (see note)
  • 250g button mushrooms, wiped clean, halved
  • 40.00 ml thyme leaves, roughly chopped
  • 700g ling fish fillets
Instructions:
  • 1. Preheat your oven to a toasty 220°C. 2. Pop those potatoes in a spacious roasting pan. 3. Drizzle in 2 tablespoons of oil, along with onion, pancetta, mushrooms, thyme, salt, and pepper. 4. Mix everything together until well combined. 5. Roast in the oven for 20 minutes until perfectly golden and delicious.
  • Coat both sides of the fish with the remaining 1 tablespoon of oil and season with salt and pepper. Place the fish on top of the potato mixture. Bake everything for an additional 10 minutes, or until the fish flakes easily with a fork and the vegetables are fully cooked.
  • Take out of the oven and cover with foil. Let it rest for 5 minutes before serving.
