Fish and vegetable skewers with coconut rice

Dreamy fish dish that's healthy and budget-friendly.
Ingredients:
  • 500g ling fish fillets, cut into 3cm cubes (see note)
  • 2 medium zucchini, halved lengthways, cut into 2cm pieces
  • 1 large red capsicum, cut into 3cm pieces
  • 62.50 ml teriyaki marinade
  • Coconut rice, to serve (see related recipe)
Instructions:
  • Skewer the fish, zucchini, and capsicum, then arrange them in a dish. Gently drizzle the marinade over the skewers, ensuring they are fully coated.
  • Preheat a barbecue plate or chargrill over medium-high heat. Grill skewers, turning occasionally, for 8 minutes, until vegetables have a light char and fish is fully cooked. Serve with coconut rice.
