Indulge in irresistible golden-baked gorgonzola and mushroom gnocchi to satisfy your cheese cravings.
Ingredients:
  • 30g butter
  • 350g mixed mushrooms, coarsely chopped
  • 2 garlic cloves, crushed
  • 1/4 tsp ground white pepper
  • 500g pkt fresh potato gnocchi
  • 100g fontina cheese or gouda cheese, chopped
  • 100g gorgonzola, crumbled
  • 185ml (3/4 cup) thickened cream
  • Fried sage leaves, to serve
Instructions:
  • Preheat the oven to 200C/180C fan forced. In a large frying pan over medium heat, melt the butter until it foams. Increase the heat to medium-high, then sauté the mushrooms and garlic for 3-5 minutes until softened. Season with salt and stir in the pepper before transferring the mixture to a 2.25L (9 cup) ovenproof dish.
  • While the gnocchi is cooking, boil them in a large saucepan of water according to the package instructions until they are just tender. Then, drain them.
  • Combine the gnocchi with the mushroom mixture and top with a mixture of fontina and gorgonzola.
  • In a small saucepan, bring the cream to a gentle boil over medium-high heat. Pour the hot cream over the gnocchi mixture. Bake until golden and bubbly for about 15-20 minutes. Finish by garnishing with crispy fried sage leaves on top.
