Satisfy your cravings with this delicious make-ahead baked gnocchi with bolognese!
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, chopped
  • 1 carrot, peeled, chopped
  • 1 celery stick, chopped
  • 500g Beef & Pork Bolognese Mince
  • 125ml red wine
  • 800g can diced tomatoes
  • 44.40 gm tomato paste
  • 2 bay leaves
  • 2 tsp Italian mixed herbs
  • 1 quantity Basic Potato Gnocchi (see recipe on taste.com.au)
  • 100g mozzarella
Instructions:
  • In a large frying pan over medium-high heat, heat the oil and add onion, carrot, celery, and garlic. Cook and stir for 5 minutes until the onion softens. Add the mince and cook for another 5 minutes, breaking up the lumps with a wooden spoon until the mince changes color.
  • Pour the wine or stock into the pan with the mince and let it come to a boil. Stir in the tomato, tomato paste, bay leaves, and mixed herbs, and bring to a boil. Reduce the heat to medium-low and simmer for 30 minutes until the sauce thickens, stirring occasionally. Remove and toss the bay leaves, then season to taste.
  • Preheat oven to 200°C. Boil one-quarter of the gnocchi in a large saucepan until they float to the surface, about 2-3 minutes. Transfer them to a tray lined with baking paper using a slotted spoon. Repeat in 3 batches with the remaining gnocchi.
  • Combine gnocchi with the sauce in the pan, gently toss together. Transfer the mixture into a baking dish, sprinkle with mozzarella, and bake for 20 minutes or until the cheese is golden and melted. Serve on individual plates and season to taste.
