Elevate pasta bake with baked gnocchi for a gourmet family dinner!
Ingredients:
  • 1 large brown onion, coarsely chopped
  • 1-2 garlic cloves, thinly sliced
  • 4 short-cut bacon rashers, coarsely chopped
  • 200g button mushrooms, thinly sliced
  • 125ml (1/2 cup) white wine
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 120g baby spinach leaves
  • 500g pkt shelf-fresh gnocchi
  • 200g bocconcini, drained, torn in half
Instructions:
  • In a large heavy-based saucepan over medium heat, sauté the onion and garlic in oil for 1 minute. Stir in the bacon and cook for 3-4 minutes until golden. Add the mushroom and cook for an additional 3-4 minutes until soft.
  • Pour in the wine and cook for 3-4 minutes or until reduced by half, scraping any flavorful bits from the pan. Mix in the tomato, season with salt and pepper, and then stir in the spinach until it wilts slightly.
  • Preheat oven to 180°C. Boil gnocchi as per packet instructions in salted water. Drain and mix with tomato sauce, stirring well.
  • Distribute the mixture evenly among six 330ml (1 1/3-cup) capacity ovenproof dishes, then sprinkle with bocconcini. Arrange the dishes on a baking tray and bake for 20-25 minutes until the bocconcini is melted and bubbly.
