Irresistible pasta bake featuring crispy bacon, juicy tomatoes, and gooey melted bocconcini. Perfect for cozy nights, a mouthwatering blend of flavors awaits with each bite.
Ingredients:
  • 250g dried macaroni pasta
  • 1 brown onion, finely chopped
  • 8 middle bacon rashers, coarsely chopped
  • 1 x 410g can chopped tomatoes
  • 20.00 ml chopped fresh continental parsley
  • Olive oil, to grease
  • 180g bocconcini, drained, sliced
Instructions:
  • Boil the pasta in a pot of generously salted water according to package instructions until it is cooked but still slightly firm. Drain well.
  • Heat oil in a medium frying pan over medium-high heat. Sauté onion and garlic until onion is soft, about 3 minutes. Add bacon and cook until crisp, about 2 minutes. Mix in tomato and tomato paste, then cook until the mixture thickens, about 5 minutes. Stir in parsley.
  • Preheat the grill to medium-high. Lightly grease four 375ml (1 1/2-cup) capacity baking dishes with oil. Divide the pasta evenly among the dishes and top with the tomato mixture. Arrange the bocconcini on top and grill for about 5 minutes until melted and bubbly.
