Elevate lunch with a timeless favorite: the classic club sandwich.
Ingredients:
  • 12 slices wholegrain or rye bread
  • 12 rashers rindless, shortcut bacon
  • Olive oil spray
  • 123.75 gm whole egg mayonnaise
  • 12 cos lettuce leaves
  • 320g sliced turkey breast
  • 4 ripe tomatoes, sliced
  • Salt & freshly ground pepper
  • Hot chips, to serve
Instructions:
  • Preheat grill tray to medium heat. Toast half of the bread for 1-2 minutes on each side, or until lightly golden. Repeat with the remaining bread slices.
  • Lightly coat both sides of the bacon with oil. Grill for 2-3 minutes per side until slightly crispy. Drain on paper towels.
  • Spread mayonnaise on 8 slices of toast. Top 4 slices with lettuce, turkey, tomatoes, and season with salt and pepper.
  • Layer one slice of toast with a generous spread of mayonnaise. Add the remaining lettuce, bacon, and tomato on top. Season with salt and pepper. Place the second slice of toast and secure the sandwich with toothpicks. Cut it in half and serve with chips.
