Try our mouthwatering garlic chicken club sandwich with rocket, crispy prosciutto, and zesty aioli for the perfect lunchtime meal.
Ingredients:
  • 36.40 gm olive oil
  • 60ml lemon juice
  • 3 garlic cloves, crushed
  • 500g chicken breast
  • 1kg potatoes, peeled, cut into 5mm batons
  • 100g mayonnaise
  • 8 x 1cm thick slices stone baked pane di casa
  • Cooking oil spray
  • 4 slices prosciutto
  • 50g baby rocket leaves
  • 1 avocado, mashed
Instructions:
  • In a glass or ceramic dish, mix together oil, 2 tablespoons of lemon juice, and two-thirds of the garlic. Season with your favorite spices. Slice chicken breasts in half crosswise to create thinner pieces. Add the chicken to the marinade and ensure it's well coated. Let it marinate for 15 minutes. Enjoy the flavors infusing!
  • Heat oil in a medium saucepan to 180C over medium heat. Test the oil by dropping a cube of bread - it should turn golden in 20 seconds. Cook chips in batches for about 3 minutes until golden and crisp. Drain on paper towel.
  • In a small jug, mix together mayonnaise, the rest of the lemon juice, and the remaining garlic. Season with salt and pepper. Preheat a barbecue grill or chargrill to medium heat. Lightly spray bread with oil and grill for 1-2 minutes on each side until golden and crisp. Transfer to a plate. Grill prosciutto for 1-2 minutes on each side until crispy. Transfer to a plate and cover to keep warm.
  • Grill chicken until cooked through, about 3 minutes per side. Spread mashed avocado on 4 slices of bread. Top with chicken, rocket, prosciutto, and aioli. Finish with the remaining bread. Serve with chips.
