Create a delectable leftover turkey or chicken club sandwich with crispy bacon, aioli, lettuce, tomato, and cheese.
Ingredients:
  • 550g White Sourdough Vienna
  • 36.40 gm olive oil
  • 4 rashers shortcut bacon
  • 100g aioli
  • 6 butter lettuce leaves
  • 300g leftover turkey (see tip)
  • 3 tomatoes, sliced
  • 4 slices Swiss cheese
Instructions:
  • Split the bread into 3 layers using a large serrated knife. Brush the cut sides of the bread with 1 1/2 tablespoons of oil. Toast the bread in batches in a large frying pan over medium-high heat for 1 minute per side.
  • In the same pan, heat the remaining oil and cook the bacon for 3 minutes on each side or until golden. Then, remove from heat.
  • Arrange the bread base cut-side up on a serving platter, cover with a generous layer of aioli. Add a layer of lettuce, turkey, and crispy bacon. Season lightly. Add the middle bread layer on top, slather with the remaining aioli. Layer with the rest of the lettuce, tomato, cheese, and remaining turkey. Finish with the bread top. Secure the layers using 4 small skewers. Cut the sandwich into quarters before serving.
