Simplify by cutting into quarters and personalize with toppings you love.
Ingredients:
  • 400 ml milk
  • 1 tablespoon dried yeast
  • 1 teaspoon caster sugar
  • 300 g strong white flour
  • ½ teaspoon bicarbonate of soda
  • vegetable oil for greasing
Instructions:
  • 1. Gently warm the milk and combine with tepid water in a large bowl. Add yeast and sugar, then let it sit in a warm place until frothy (about 15 minutes). 2. Sift together flour, bicarbonate of soda, and 1 teaspoon of fine sea salt in a large bowl. Make a well in the center and pour in the yeast mixture. Whisk from the center outward until the consistency resembles double cream. 3. If needed, add a splash more water. Cover with a damp tea towel and set aside until little bubbles form on the surface (about 45 minutes). 4. Grease a non-stick frying pan with oil and heat over medium. Pour half the batter into the pan and cook for 6 minutes until little bubbles appear. Flip and cook for another 4 minutes until golden. 5. Transfer to a board and repeat with the rest of the batter. Cut into quarters and serve with your favorite toppings.
