Elevate your classic club sandwich with quick and easy chicken salad made with pre-cooked shredded chicken breast from the freezer.
Ingredients:
  • 1/3 cup mayonnaise
  • 1 teaspoon honey mustard
  • 2 cups shredded cooked chicken breast
  • 1/3 cup finely chopped celery
  • 6 slices whole grain bread, toasted
  • 8 slices tomato
  • 4 slices bacon, cooked, drained
  • 4 leaves Romaine or leaf lettuce
  • 4 tiny dill or sweet gherkins
Instructions:
  • Combine creamy mayonnaise and tangy mustard in a medium bowl. Add in the tender chicken and crunchy celery, stirring until evenly combined.
  • On two bread slices, generously spread 1/2 cup of chicken mixture. Layer each with 2 tomato slices, 2 half slices of bacon, and 1 lettuce leaf. Place another bread slice on top. Repeat layers, beginning with chicken mixture, and finish by topping each with a third bread slice.
  • Skewer a pickle onto each of the 4 toothpicks, then place 2 toothpicks into each sandwich. Cut the sandwiches in half.
