Simple and delicious salad for a quick meal.
Ingredients:
  • 100g prosciutto or bacon
  • 110g cherry bocconcini, halved
  • 50g slivered almond & pine nut mix, toasted
  • 56.88 gm extra virgin olive oil
  • 42.00 gm lemon juice
  • 4.00 gm brown sugar
  • 6 roma tomatoes, quartered
  • 1 baby cos lettuce, leaves separated
Instructions:
  • Place a bocconcini on top of each tomato and bake for an additional 2 minutes, until the cheese is just starting to melt.
  • Preheat your oven to 180C (160C fan-forced). Arrange prosciutto and tomatoes on a baking tray and bake for 12-15 minutes until the prosciutto is crispy and the tomatoes have slightly collapsed. Remove the prosciutto from the tray and set aside.
  • Combine baby cos, basil, nut mix, and tomatoes in a bowl. Sprinkle crumbled prosciutto on top. Drizzle with the dressing and toss gently to coat everything.
