Decadent sponge cake topped with crunchy brown sugar and coconut.
Ingredients:
  • 4 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons butter
  • 1 cup milk
  • 1 cup packed brown sugar
  • 1 cup flaked coconut
  • 6 tablespoons butter
  • 4 tablespoons milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Combine sifted flour, salt, and baking powder, then set aside.
  • In a large bowl, whip eggs with an electric mixer on high for 4 minutes until fluffy. Slowly add sugar while beating until well combined. Gently fold in the flour mixture until just combined.
  • In a saucepan, simmer 1 cup of milk with 2 tablespoons of butter until bubbly. Stir into batter and mix until incorporated.
  • Transfer batter into a 9x13 inch pan. Bake at 350°F (175°C) for 1 hour, or until a toothpick inserted in the cake comes out clean.
  • For the frosting: Combine brown sugar, coconut, 6 tablespoons of butter, and 4 tablespoons of milk in a saucepan. Heat and stir until the butter is melted and the mixture is smooth. Immediately pour over the cake when it comes out of the oven. Place the cake under the broiler for 3 to 4 minutes or until the icing is light brown.
