Vintage Lazy Daisy Cake - Easy hot milk sponge with gooey caramelized coconut frosting. Decadent taste, minimal effort.
Ingredients:
  • 1/2 cup milk
  • 1 tablespoon butter
  • 2 large eggs
  • 1 cup (202g) sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 cup (135g) all-purpose flour
  • 1 teaspoon baking soda
  • Topping:
  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 cup (87g) sweetened coconut flakes
  • 2/3 cup (154g) packed brown sugar
  • 3 tablespoons heavy cream
Instructions:
  • Preheat your oven to a toasty 350°F and generously grease an 8x8-inch square baking pan.
  • In a small saucepan over gentle heat, combine the milk and butter until the butter melts and the milk steams. Set aside for the cake.
  • Prepare the batter by combining eggs, sugar, vanilla, and salt in a large bowl. Whisk vigorously for about 60 seconds until the color lightens and the mixture thickens slightly. Have fun while you whisk! Add the flour and sprinkle the baking powder over it, crushing any lumps with your fingers. Switch to a spatula, fold in the dry ingredients until combined, then pour in the warm milk and butter mixture, folding until a slightly liquidy batter forms.
  • Pour the batter into the greased pan and keep the bowl aside for later use. Bake until the cake is puffed, golden around the edges, and springs back in the center when gently pressed with your fingertip, approximately 30 minutes.
  • While you wait, prepare the topping by melting butter over medium-low heat in the saucepan used for warming the milk. Combine coconut, brown sugar, cream, salt, and melted butter in the batter bowl (no need to wash it). The topping will thicken slightly and will thin out upon contact with the cake.
  • Once the cake is out of the oven, adjust the broiler rack to be 5 inches from the heating element. Spread the topping over the hot cake, ensuring even coverage with a spatula. Broil the cake until the topping bubbles rapidly, approximately 3 minutes, checking every minute for even browning and rotating the pan as needed.
  • Serve the cake on a wire rack to cool completely before slicing and enjoying. To store leftovers, cover the cake with plastic wrap or foil.
