Make Chef John's quick and delicious pork potstickers that mimic soup dumplings when cooked in flavorful broth.
Ingredients:
  • 2 cups all-purpose flour, or more as needed
  • 0.75 cup warm water
  • 0.5 teaspoon kosher salt
  • 2 pounds ground pork
  • 8 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • 0.66666668653488 cup thinly sliced green onions
  • 0.5 cup thinly sliced chives
  • 4 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons gochugaru (Korean red pepper flakes)
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 0.33333334326744 cup seasoned rice vinegar
  • 3 tablespoons soy sauce, or to taste
  • 1 teaspoon gochugaru (Korean red pepper flakes)
  • 4 cups chicken broth
  • 1 teaspoon vegetable oil
Instructions:
  • In a bowl, mix flour, salt, and water until a sticky ball of dough forms. Knead by hand, gradually adding more flour until dough is soft and supple. Cover in plastic wrap and let rest at room temperature for 1 hour.
  • In a bowl, mix ground pork, garlic, ginger, green onions, and chives. Season with salt, pepper, gochugaru, soy sauce, and sesame oil. Gently combine using two forks. Cover with plastic wrap and chill until needed.
  • Combine the vinegar, soy sauce, and gochugaru with the chicken broth, then let it sit.
  • Take the dough and divide it into 4 equal pieces. Roll one piece into a rope the thickness of your thumb. Using a rolling pin, flatten it into a long band about 3 inches wide, adding flour only if necessary. Dust the top with flour, then flip it over. Lightly brush the surface with water using your fingers until slightly sticky.
  • 1. Moisten your fingers and evenly spread 1/4 of the pork filling onto the dough. Fold the dough over the filling, pressing down firmly. Trim any excess dough if needed. Dust with flour, flip it over so the seam is on the bottom, and divide into 16 pieces using the edge of your hand and a bench scraper. Repeat with the rest of the dough and filling.
  • In a hot pan, sear dumplings in batches until golden brown on each side. Add some broth and bring to a boil. Cover and simmer until pork is fully cooked, about 3 minutes. Serve dumplings with broth in bowls.
