Make-ahead chocolate cake with room temperature ganache for effortless serving.
Ingredients:
  • 120g unsalted butter, chopped
  • 220g (1 cup firmly packed) brown sugar
  • 2 eggs
  • 240g (1 cup) sour cream, at room temperature
  • 225g (1 1/2 cups) plain flour
  • 75g (3/4 cup) Dutch cocoa (see top tips)
  • 2.00 gm baking powder
  • 0.63 gm bicarbonate of soda
  • 200g dark chocolate (55% cocoa solids), finely chopped
Instructions:
  • For the ganache, transfer the chocolate to a spacious heatproof bowl. Heat the cream in a saucepan until simmering over medium heat. Pour the hot cream over the chocolate and mix until smooth. Separate the ganache into 2 bowls. Cover one with plastic wrap and refrigerate, while leaving the second bowl at room temperature.
  • 1. Preheat your oven to 160°C. Grease cake pans and line them with baking paper. 2. In a saucepan, combine butter and sugar. Cook over medium heat, stirring constantly, for 3 minutes until the sugar dissolves and the butter melts. 3. Remove the saucepan from the heat and whisk in the eggs, sour cream, and vanilla. 4. Sift in the flour, cocoa, baking powder, and bicarbonate of soda. Whisk the mixture until smooth. 5. Divide the batter evenly between the prepared cake pans.
  • Bake for 35 minutes, switching pans halfway through, or until a skewer inserted in the center comes out clean. Let cakes cool in pans for 5 minutes, then transfer to a wire rack to cool completely.
  • Take the ganache out of the fridge and stir it until it becomes smooth. Spread it evenly over the top of one cake. Place the second cake on top and gently press them together. Drizzle room temperature ganache over the assembled cake to serve.
