Effortlessly delicious lazy hazy beef chili with chunky salsa and IPA for a tasty cheat day treat.
Ingredients:
  • 2 tablespoons chili powder, or to taste
  • 1/4 teaspoon ground chipotle
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons kosher salt, plus more to taste
  • 1/8 teaspoon cinnamon
  • 12 ounces hazy IPA beer
  • 2 teaspoon white sugar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 (15-ounce) can diced fire-roasted tomatoes with green chilies
  • 2 (16-ounce) jars extra chunky salsa
  • 2 cans pinto beans, drained
Instructions:
  • Place the beef into the cold pot and immediately set the heat to high.
  • As the beef sizzles, use a potato masher or spatula to break it into small pieces. Adjust the size of the crumbles based on the desired texture. Cook and continue breaking up the beef until it turns brown, approximately 7 minutes.
  • Sprinkle chili powder, chipotle, black pepper, salt, and cinnamon into the pot. Stir and cook for 1 minute before adding the beer.
  • Stir gently, loosening the flavorful browned bits from the bottom of the pot. Allow the mixture to boil until the liquid reduces by half, around 2 to 3 minutes.
  • Combine the sugar, oregano, garlic powder, diced tomatoes, and jarred salsa in the pot. Stir well and bring the mixture back to a simmer.
  • Add the beans and lower the heat to medium-low. Let the chili simmer, stirring occasionally, until it thickens and reaches your desired taste, approximately 1 hour.
  • Adjust the seasoning to taste, then garnish with sour cream, green onions, Cheddar cheese, and cilantro according to preference.
