Creamy potato gem bake recipe

Cheesy baked comfort food for lazy days.
Ingredients:
  • 400g frozen potato gems
  • 30g butter
  • 30.00 ml plain flour
  • 80g (1 cup) coarsely grated cheddar
  • Chopped crispy bacon, to serve
  • Fresh chives, chopped, to serve
Instructions:
  • Preheat the oven to 200C/180C fan forced. Place the potato gems on a large baking tray and bake for 20 minutes until crisp. Let them cool briefly before serving.
  • In a 20cm ovenproof frying pan, melt butter over medium heat. Stir in flour and cook for 1 minute. Slowly pour in milk, stirring until smooth. Simmer for 2 minutes, then stir in cheddar until melted.
  • Lay the potato gems on top of the cheese sauce in the pan. Bake until bubbly, about 10 minutes. Garnish with crispy bacon and fresh chives before serving.
