Potato gem chicken carbonara recipe

Indulge in a comforting twist on classic carbonara with crispy bacon, chicken, and potato gems. A family favorite that will have you coming back for more!
Ingredients:
  • 1/2 x 900g packet frozen potato gems
  • 36.40 gm extra virgin olive oil
  • 300g chicken breast fillets, cut into 2cm pieces
  • 300g button mushrooms, sliced
  • 3 bacon rashers, trimmed, coarsely chopped
  • 2 garlic cloves, finely chopped
  • 300ml carton thickened cream
  • 80g (1 cup) coarsely grated cheddar
  • Fresh basil leaves, to serve
Instructions:
  • Preheat your oven to 220C (200C fan forced) and prepare a baking tray by lining it with baking paper.
  • Arrange the potato gems on the baking tray and bake until they are beautifully golden and crispy, about 30 minutes. Allow them to cool for 5 minutes before serving.
  • Heat half of the oil in a large, deep frying pan over medium-high heat. Brown the chicken for about 5 minutes, stirring occasionally. Transfer to a plate.
  • Heat the rest of the oil in a pan over medium-high heat. Sauté mushrooms, bacon, and garlic, stirring occasionally, for 6-8 minutes until bacon is crisp and mushrooms are golden. Place a quarter of the mixture in a small bowl. Pour cream into the pan and bring to a simmer. Reduce heat to medium-low and simmer, uncovered, for 3 minutes until the sauce slightly thickens. Put the chicken back in the pan and stir in cheddar until melted. Enjoy!
  • Combine the potato gems in the pan, mixing until well blended. Top with the bacon mixture and garnish with fresh basil leaves before serving.
