Chicken Kiev and potato gem pie recipe

Create a cozy winter meal by combining favorite comfort foods: pie, chicken Kiev, and crispy potato gems.
Ingredients:
  • 25g butter
  • 800g chicken thigh fillets, cut into 2.5cm pieces
  • 2 small leeks, white part only, halved, thinly sliced
  • 20.00 ml fresh lemon thyme leaves
  • 40.00 ml plain flour
  • 125ml (1/2 cup) milk
  • 300ml pouring cream
  • 23.40 gm Dijon mustard
  • 82.50 ml finely chopped fresh continental parsley
  • 700g frozen potato gems
Instructions:
  • Preheat your oven to a toasty 220C/200C fan forced.
  • In a large frying pan over high heat, heat the butter and oil until the butter is foaming. Add the chicken and cook for 5 minutes or until browned. Stir in the leek, garlic, and thyme, and continue to cook for another 5 minutes until the leek softens.
  • Coat the flour in the pan and gradually stir in the milk and cream until a smooth sauce forms. Bring to a boil, then simmer on low heat for 3-4 minutes until slightly thickened. Stir in mustard and half of the parsley, then transfer to an ovenproof dish.
  • Place the potato gems over the chicken mixture and bake for 30 minutes until golden. Sprinkle the remaining parsley just before serving.
