Creamy ham and mushroom gnocchi bake

Quick and convenient meal perfect for busy afternoons with the kids!
Ingredients:
  • 1 medium brown onion, finely chopped
  • 300g ham steak
  • 200g button mushrooms, sliced
  • 62.50 ml plain flour
  • 2 tsp mustard powder
  • 2 x 375ml cans light evaporated milk
  • 500g potato gnocchi
  • 50g baby spinach
  • 125.00 ml grated light mozzarella cheese
  • 40.00 ml dried breadcrumbs
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced and lightly grease a 6cm-deep, 19cm x 27cm (base) baking dish.
  • In a large, deep frying pan over medium-high heat, heat oil. Add onion and ham and cook until onion softens, about 3 to 4 minutes. Add mushrooms and cook until tender, another 3 to 4 minutes. Stir in flour and mustard, cooking for 1 minute. Reduce heat to medium, pour in milk, and stir until well combined. Bring to a simmer.
  • Spread a layer of gnocchi and spinach in the prepared baking dish, then pour in the milk mixture. Sprinkle with salt and pepper, mix well. In a separate bowl, combine cheese and breadcrumbs, then sprinkle over the top. Bake for 20 minutes until golden, let it rest for 5 minutes, and serve.
