Creamy garlic chicken and mushroom penne pasta with smoked ham - a delicious and simple main course.
Ingredients:
  • 2 (8 ounce) skinless, boneless chicken breasts, sliced
  • 1 tablespoon olive oil
  • 3 cloves garlic, smashed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 (12 ounce) package penne pasta
  • 1 tablespoon butter
  • 1 (8 ounce) package sliced fresh mushrooms
  • 6 ounces smoked ham, cubed
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 0.25 cup grated Parmesan cheese, or to taste
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine sliced chicken with a flavorful mix of olive oil, garlic powder, onion powder, salt, and pepper in a baking dish. Mix in smashed garlic for extra aroma and taste.
  • Roast the chicken in the preheated oven for 10 minutes until golden brown, then flip it over and cook for an additional 8 minutes until fully cooked through and no longer pink in the centers.
  • While waiting, prepare a large pot of lightly salted boiling water. Add penne pasta and cook, stirring occasionally, until it is al dente, approximately 11 minutes. Drain the pasta, making sure to save 1/4 cup of the pasta water.
  • In a large pan over medium-high heat, melt butter. Saute mushrooms in the butter until all water is released, about 7 to 10 minutes. Stir in ham and minced garlic, cooking for an additional 5 minutes. Whisk in cream and gradually add reserved pasta water for desired consistency. Add chicken, pasta, and Parmesan to thicken the sauce. Serve hot.
