Baked gnocchi casserole with chicken, mushrooms, spinach, and Parmesan.
Ingredients:
  • 1 tablespoon olive oil
  • 1 (8 ounce) package sliced fresh mushrooms
  • salt and ground black pepper to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 1 cup chicken broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 0.5 (3 pound) rotisserie chicken, boned and shredded
  • 1 (16 ounce) package potato gnocchi
  • 2 cups baby spinach
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) on the top rack.
  • In a large skillet over medium heat, sauté mushrooms in oil until they begin to soften, seasoning with salt and pepper. This should take about 4 minutes. Plate or place in a bowl, then clean the skillet.
  • In the same skillet, melt butter, then stir in flour until a paste forms, about 3 minutes. Gradually whisk in milk and broth until smooth. Cook while whisking until thickened, about 5 minutes. Season with 1/2 teaspoon salt and nutmeg. Add mushrooms, chicken, gnocchi, and spinach to the sauce and stir until gnocchi are coated and spinach wilts, about 3 minutes.
  • Transfer the mixture into a spacious baking dish and generously sprinkle with Parmesan cheese.
  • Bake until bubbly, around 20 minutes in the preheated oven.
