Delight the family with a savory one-pan mushroom and spinach chicken dish.
Ingredients:
  • 36.40 gm olive oil
  • 4 Australian Chicken Breast Fillets
  • 1 leek, pale section only, thinly sliced
  • 200g cup mushrooms, sliced
  • 1 tsp minced garlic
  • 300ml light cooking cream
  • 60g pkt Baby Spinach
  • 20.00 ml chopped chives
Instructions:
  • In a large deep frying pan over medium-high heat, heat half of the oil. Make 3 slits on the top of each chicken piece using a sharp knife. Cook each side for 4 minutes or until chicken is cooked through. Transfer the chicken to a plate and cover to keep warm.
  • Heat the remaining oil in the pan over medium heat. Sauté leek, mushroom, and garlic for 2 minutes until leek softens. Sprinkle flour over the vegetables and cook for 1 minute until they are well coated.
  • Add the chicken back to the pan along with the cream. Cover and cook for 3 minutes until the sauce slightly thickens. Mix in the spinach and chives, then season to taste.
