Chef John's easy beef and mushroom one-pan pasta for a satisfying comfort meal in a snap.
Ingredients:
  • 1 tablespoon unsalted butter
  • 1 tablespoon vegetable oil
  • 1 cup thinly sliced mushrooms
  • 1 teaspoon salt, plus more to taste
  • 0.5 cup diced onion
  • 1 pound ground beef
  • freshly ground black pepper
  • 1 pinch cayenne pepper
  • 2 cloves minced garlic
  • 1.33 tablespoons flour
  • 2 tablespoons vodka
  • 2.5 cups beef broth, or as needed
  • 1 cup water
  • 2.5 cups egg noodles
  • 0.5 cup sour cream, plus more for serving
  • 2 tablespoons fresh sliced chives or green onions
Instructions:
  • Prepare all the ingredients.
  • In a skillet over medium-high heat, melt butter and oil until sizzling. Add mushrooms, sprinkle with salt, and saute until beautifully golden brown, stirring occasionally, for 5 to 10 minutes.
  • Saute the onion and ground beef together until the meat is browned and crumbly, and the onions are soft and translucent, approximately 5 minutes. Season with black pepper and cayenne to taste.
  • Add fragrant minced garlic and flour to the mixture, and cook for 1 minute.
  • Add vodka and let it simmer until evaporated, approximately 30 seconds.
  • Combine the beef broth and water in the pot and bring to a gentle simmer. Stir occasionally and cook for 10 minutes.
  • Lower the heat to medium and gently combine the noodles. Cover tightly and let it simmer for 5 minutes. Uncover, stir well, cover again, and continue cooking until the noodles are just tender, approximately 3 minutes. Remember to refer to the Cook's Note for further instructions.
  • After noodles are done cooking, lower the heat and mix in the sour cream.
  • Garnish with extra sour cream and green onions or chives before serving, if desired.
