Loaded red potato salad with tangy blue cheese, crisp bacon, and green onions for a satisfying and unforgettable bite!
Ingredients:
  • 4 slices bacon
  • 2 pounds red new potatoes
  • 0.5 cup olive oil
  • 3 tablespoons white vinegar
  • 1 bunch green onions, chopped
  • 0.5 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1.5 ounces blue cheese, crumbled
Instructions:
  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned. Drain, crumble, and set aside.
  • First, get a sizable pot of water boiling with a dash of salt. Drop in the potatoes and simmer until they're just tender, around 15 minutes. Drain, let them cool, and then chop, keeping the skins on.
  • Combine oil, vinegar, green onions, salt, and pepper in a large bowl. Mix in potatoes, bacon, and cheese until well coated.
