Picnic Potato Salad with No Mayonnaise

Blue cheese & chive potato salad, a flavor-packed picnic favorite without mayo.
Ingredients:
  • 2 pounds small new potatoes, quartered
  • 2 tablespoons balsamic vinegar
  • 0.25 cup extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped fresh basil
  • 0.25 teaspoon ground black pepper
  • 0.5 cup chopped onion
  • 0.75 cup crumbled blue cheese
  • 2 tablespoons chopped fresh chives
Instructions:
  • In a large pot, cover potatoes with lightly salted water and bring to a boil. Simmer over medium-low heat until tender, about 10 to 15 minutes. Drain.
  • Combine vinegar, olive oil, mustard, basil, salt, and pepper in a large bowl. Add potatoes and onion, toss gently to coat. Allow to cool for about 30 minutes.
  • Incorporate crumbled blue cheese and chopped chives into the potato salad until mixed evenly.
