Chargrilled potato, asparagus and snow pea salad

Barbecue potato salad with asparagus, snowpeas, and horseradish mayo.
Ingredients:
  • 1kg baby washed potatoes, unpeeled, cut into 1cm-thick slices
  • 2 bunches asparagus, trimmed
  • 200g snow peas, trimmed
  • 150g mayonnaise
  • 40.00 ml white wine vinegar
  • 23.40 gm Brand Wholegrain Mustard
  • 20.00 ml horseradish cream
  • 125.00 ml fresh chives, finely chopped
Instructions:
  • Heat up the barbecue or chargrill to medium-high. Boil the potato in a large saucepan for 5 minutes until almost tender. Drain and mix with 1 1/2 tablespoons of oil in a bowl. Season with salt and pepper. Grill the potato for 2 minutes on each side until tender. Serve on a platter.
  • Drizzle the asparagus and snow peas with the remaining oil and grill for 1-2 minutes per side until cooked to perfection. Allow to cool before serving.
  • In a small bowl, mix together mayonnaise, vinegar, mustard, horseradish cream, and half of the chives. Season with salt and pepper to taste.
  • Place the asparagus and snow peas elegantly on a platter alongside the potato. Drizzle the dressing over the vegetables and generously sprinkle with the remaining chives for added flavor and freshness.
