Creamy red potato salad with tangy blue cheese, crunchy bacon, and tender green beans.
Ingredients:
  • 5 cups iced water, or as needed
  • 1 pound small red potatoes
  • 0.5 pound fresh green beans, cut into 1-inch pieces
  • 4 slices bacon
  • 0.25 cup white wine vinegar
  • 0.25 cup olive oil
  • 2 tablespoons mayonnaise
  • 1 tablespoon stone-ground mustard
  • 4 ounces crumbled blue cheese
  • 4 green onions, thinly sliced
Instructions:
  • Prepare a refreshing ice water bath in a large bowl. Cover a baking sheet with a clean dish towel.
  • In a large pot, cover potatoes with salted water and bring to a boil. Simmer until tender, about 18 to 20 minutes. Add green beans and blanch for 1 minute. Drain the vegetables and transfer to a bowl of iced water for 5 minutes to halt cooking. Remove from the water with a slotted spoon and place on a baking sheet to dry. Quarter the potatoes.
  • In a large skillet over medium-high heat, cook the bacon until evenly browned, about 10 minutes, turning occasionally. Once done, drain and cool the bacon slices on paper towels, then crumble them.
  • Combine vinegar, olive oil, mayonnaise, and mustard in a large bowl and mix well. Season with salt and black pepper. Add potatoes and green beans to the bowl and toss until coated. Sprinkle bacon, blue cheese, and green onions on top and gently mix everything together.
