Potato, bacon & blue cheese bake

Indulge in a decadent blue cheese, potato, and bacon bake for a cozy family dinner.
Ingredients:
  • 1 250g pkt rindless short cut bacon
  • 1kg desiree potatoes, unpeeled, quartered
  • 2 red onions, halved, each half cut into 3 wedges
  • 80g piece blue cheese (King Island Dairy brand), chopped
  • Salt & freshly ground black pepper
  • 20.00 ml fresh thyme leaves
  • 160ml (2/3 cup) thickened cream
  • 160ml (2/3 cup) chicken style liquid stock
Instructions:
  • Preheat oven to 375°F. Slice each bacon rasher into 1cm-thick pieces using a sharp knife.
  • Mix together the potatoes, onions, bacon, and half of the blue cheese in a large bowl. Season with salt and pepper. Transfer the mixture into a 2.5L (10-cup capacity) ovenproof baking dish, shaping it into a square or rectangle. Sprinkle the thyme leaves on top.
  • Whisk together cream and chicken stock using a fork in a jug. Pour the mixture over the potatoes and sprinkle with the remaining blue cheese. Bake uncovered in a preheated oven for 1 hour and 20 minutes until golden brown. Serve immediately.
