Whip up a quick and satisfying potato and bacon hash with crispy fried eggs - perfect for a post-party pick-me-up or a hearty breakfast boost. Ready in just 40 minutes!
Ingredients:
  • 4 slices thick-cut bacon, cut in 1-inch pieces
  • 4 baking potatoes, peeled, finely chopped
  • 1 cup chopped onions (2 medium)
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/4 teaspoon pepper
  • 2 teaspoons chopped fresh thyme leaves
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley
  • 1 tablespoon olive oil
  • 4 eggs
Instructions:
  • Cook the bacon in a large skillet over medium heat for about 5 minutes until it becomes crispy. Transfer the bacon to a paper towel to drain and set it aside.
  • Add the potatoes, onions, and bell peppers to the flavorful drippings in the skillet. Cook for approximately 20 minutes, stirring occasionally, until the potatoes are tender and the onions and peppers have deliciously browned.
  • Season the potato mixture with a pinch of salt and pepper. Add the bacon back to the skillet, then mix in the fragrant thyme and parsley.
  • Heat a 10-inch skillet or sauté pan over medium heat. Add oil, crack eggs into the skillet, and cover with a lid or plate. Cook for 3 to 4 minutes until the egg yolks are firm. Serve the fried eggs on top of the hash.
