Peppered Bacon Hash Brown Pie

Cheesy bacon and potato pie made with Original Bisquick® mix, perfect for a crowd of eight.
Ingredients:
  • 3 tablespoons brown sugar
  • 1 1/2 teaspoons coarse ground black pepper
  • 12 slices center-cut bacon
  • 2 1/2 cups Original Bisquick™ mix
  • 6 tablespoons cold butter
  • 1/4 cup boiling water
  • 1 cup frozen diced hash brown potatoes, thawed
  • 1 1/2 cups shredded sharp Cheddar cheese (6 oz)
  • 4 green onions, sliced (1/4 cup)
  • 1 1/2 cups half-and-half
  • 4 eggs
  • 1/2 teaspoon salt
  • 1 cup grape tomatoes, halved
Instructions:
  • Preheat oven to 425°F. Line a 15x10-inch pan with foil and place a wire cooling rack in the pan. In a small bowl, combine brown sugar and pepper. Press the mixture onto one side of each bacon slice. Arrange bacon on the rack. Bake for 18 to 20 minutes until crispy.
  • - Preheat the oven to 350°F. Grease a 9 1/2-inch glass deep-dish pie plate. - In a bowl, combine Bisquick mix and cut in butter until crumbly. Stir in water until a soft dough forms. Press the dough into the pie plate, forming a crust. - Sprinkle crumbled bacon, potatoes, cheese, and onions over the crust. - In another bowl, whisk together half-and-half, eggs, and salt until blended. Pour over the ingredients in the crust.
  • Bake for 50-55 minutes until a knife inserted in the center comes out clean. Allow it to rest for 10 minutes, then cut into 8 wedges. Halve the remaining 4 slices of bacon and garnish each wedge with bacon and tomatoes.
