Spicy mince quesadillas with creamy avocado smash: a delicious combo!
Ingredients:
  • 18.40 gm vegetable oil
  • 500g beef mince
  • 35g sachet taco seasoning
  • 125.00 ml thick and chunky salsa
  • 3 green onions, thinly sliced
  • 125g can kidney beans, drained, rinsed
  • 2 small avocados
  • 65.63 gm lemon juice
  • 8 flour tortillas
  • 250.00 ml grated reduced-fat tasty cheese
  • Olive oil cooking spray
  • Lemon wedges, to serve
Instructions:
  • In a saucepan over medium-high heat, heat oil. Add mince and cook for 6 to 8 minutes until browned and cooked through, breaking it up with a wooden spoon. Stir in seasoning, salsa, onion, and beans.
  • Combine ripe avocado and freshly squeezed lemon juice in a bowl and set aside.
  • Lay down a tortilla on a flat surface. Add a generous portion of the mince mixture, follow with a sprinkle of cheese, then layer with another tortilla. Repeat layering process with the remaining ingredients.
  • Prepare the frying pan by spraying it with oil and heating it over medium heat. Add 1 quesadilla to the pan and spray the top with oil. Cook for 1 to 2 minutes, lightly pressing down with a spatula, until the base is golden. Use a plate to flip the quesadilla over and slide it back into the pan with the uncooked side down. Cook for an additional 1 to 2 minutes until golden. Transfer to a plate and cover to keep warm. Repeat the process with the remaining tortillas, mince mixture, and cheese.
  • Cut the quesadillas into wedges and serve with avocado smash and lemon wedges.
