Corned Beef Quesadillas

Try a fusion twist on Mexican cuisine with a simple recipe using Old El Paso flour tortillas and traditional Reuben sandwich fixings.
Ingredients:
  • 4 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 tablespoon butter, melted
  • 8 slices (about 1 oz each) Irish Swiss cheese
  • 1 cup chopped leftover corned beef
  • 1/2 cup well-drained sauerkraut
  • Thousand Island dressing, if desired
Instructions:
  • Preheat a nonstick griddle or large skillet over medium heat. Brush one side of each tortilla with melted butter and place the tortillas, buttered side down, on the griddle.
  • Lay a cheese slice on each tortilla, followed by 1/4 cup of corned beef, 2 tablespoons of sauerkraut, and another cheese slice. Fold the tortilla in half to cover the filling. Cook for 3 to 5 minutes, flipping once, until golden brown and cheese is melted.
  • Slice each quesadilla into 4 delicious wedges and enjoy alongside Thousand Island dressing.
