Classic breakfast hash with corned beef, potatoes, onions, and optional eggs.
Ingredients:
  • 2 to 3 tablespoons unsalted butter
  • 1 medium onion, finely chopped (about 1 cup)
  • 2 to 3 cups finely chopped, cooked corned beef
  • 2 to 3 cups chopped cooked potatoes, preferably Yukon gold
  • Salt and pepper
  • Chopped fresh parsley
Instructions:
  • Sauté the onions until translucent in a large skillet over medium heat with butter, preferably cast iron.
  • Incorporate the chopped corned beef and potatoes into the mixture, ensuring they are evenly distributed in the pan. Turn up the heat to high or medium-high and firmly press down on the mixture using a metal spatula.
  • Avoid stirring the potatoes and corned beef and allow them to brown. Listen for the sizzling sound as this indicates they are cooking well. Check browning progress by gently lifting with a metal spatula. Once nicely browned, flip sections over in the pan to brown the other side. Press down with the spatula. If sticking occurs, add more butter. Keep cooking until both the potatoes and corned beef are golden brown.
  • Remove the pan from heat and gently fold in the vibrant parsley. Sprinkle generously with freshly ground black pepper and a pinch of salt.
