Delicious, easy corned beef hash patties - perfect for using up leftover mashed potatoes. Enjoy with green beans for a simple supper or eggs and toast for a hearty breakfast.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cups leftover mashed potatoes
  • 1 cup shredded cooked corned beef
Instructions:
  • In a large skillet over medium heat, warm the oil. Cook the onion until translucent, then transfer to a medium bowl. Combine with mashed potatoes and corned beef, and season with salt and pepper. Shape into 8 patties and pan-fry over medium-high heat until golden brown on both sides.
