Delicious one-skillet corned beef and potato hash, perfect for a quick and hearty breakfast with eggs.
Ingredients:
  • 6 large potatoes, peeled and diced
  • 1 (12 ounce) can corned beef, cut into chunks
  • 1 medium onion, chopped
  • 1 cup beef broth
Instructions:
  • In a large, deep skillet over medium heat, simmer potatoes, corned beef, onion, and broth until the potatoes are soft enough to mash and the liquid is almost evaporated. Stir well and serve hot.
