Corned beef hash patties with parsley sauce

Sneak extra veggies into delicious corned beef patties with mashed potato, carrot, and spring onion.
Ingredients:
  • 500g Beef Corned Silverside, cut into 1cm pieces
  • 2 x 350g tubs Fresh Mashed Potato
  • 1 carrot, peeled, grated
  • 1 spring onion, thinly sliced
  • 50g plain flour
  • 23.40 gm seeded mustard
  • 160g pkt Creamy White Finishing Sauce, heated
  • 20.00 ml flat-leaf parsley, chopped
  • Mediterranean salad, to serve
  • Lemon wedges, to serve
Instructions:
  • Mix together the beef, mashed potato, carrot, spring onion, flour, and mustard in a bowl. Add seasoning. Form the mixture into 12 uniform patties. Chill on a plate in the fridge for 10 minutes.
  • In a large frying pan over medium heat, heat oil. Cook patties in batches, flipping once, until they are golden and heated through, for about 3 minutes per side.
  • Mix the finishing sauce and parsley in a bowl. Serve the patties with the parsley sauce, salad, and lemon wedges.
