Corned beef hash, scrambled eggs, peppers, and Cheddar cheese in a delectable crescent ring.
Ingredients:
  • 1 (8 ounce) package refrigerated crescent rolls
  • 4 eggs
  • 0.25 cup milk
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon ground cayenne pepper
  • 2 tablespoons butter
  • 0.25 cup chopped red bell pepper
  • 1 jalapeno pepper, seeded and chopped
  • 1 tablespoon vegetable oil
  • 1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
  • 1 cup shredded Cheddar cheese, divided
  • Salsa for serving
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and set up a baking sheet lined with parchment paper.
  • Unroll the crescent rolls and lay them out in a circle on a parchment paper, forming a 4-inch circle by overlapping the short sides of the triangles. Gently press down on the overlapping edges to flatten.
  • Combine eggs, milk, garlic powder, onion powder, cumin, and cayenne pepper; whisk until well blended.
  • In a nonstick pan over medium-low heat, melt butter until sizzling. Add chopped red peppers and jalapeno peppers, cooking and stirring until tender and fragrant, about 5 minutes. Pour in the eggs, gently scrambling and folding until softly set, approximately 3 minutes. Remove from the heat and serve immediately.
  • In a nonstick pan over medium heat, warm up vegetable oil. Add Hormel Corned Beef Hash and cook, stirring occasionally, until heated through and slightly browned, about 8 to 10 minutes.
  • Distribute corned beef hash evenly around the crescent roll ring. Layer with 1/2 cup of shredded cheese and scrambled eggs. Finish off with another 1/2 cup of shredded cheese on top.
  • Carefully fold the corners of each triangle over the hash, eggs, and cheese, tucking them under the center to create a beautiful ring, leaving some filling exposed for a delicious finish.
  • Bake until golden brown in a preheated oven for 20-25 minutes.
  • Allow to cool for 3 minutes before enjoying. Serve alongside a flavorful salsa.
