Satisfying egg, corned beef hash, pepper, and mushroom casserole, perfect for any meal.
Ingredients:
  • 12 eggs
  • 1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
  • 1 tomato, diced
  • 0.5 cup diced green bell pepper
  • 0.5 cup diced fresh mushrooms
  • 2 tablespoons finely chopped green onion
  • 2 teaspoons salt
  • 0.25 teaspoon pepper
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly oil a 9x13-inch baking dish.
  • In a large mixing bowl, gently whisk the eggs. Combine corned beef hash and mix to break up chunks. Fold in tomato, green pepper, mushrooms, green onion, salt, and pepper. Transfer the mixture to a prepared baking dish.
  • Bake in a preheated oven until vegetables are tender and eggs are cooked through, about 15 to 20 minutes.
  • Allow to rest for a few minutes before slicing into squares and serving.
